Ramen Ittoku
らーめん いっとく
Ramen Ittoku in Sendagi offers aromatic seafood Toku Soba, corn-sweetened chicken paitan, and tapioca-kneaded dipping noodles, paired with signature fried rice, gyoza, and mini rice bowls.
01 / ABOUT THE PLACE
Step inside Ramen Ittoku, and the rich aroma of seafood stock immediately sets expectations. The signature Toku Soba combines an ocean-scented blend of niboshi dried sardines, bonito flakes, mackerel flakes, and kombu kelp with a chicken bone broth, drawing together multiple layers of umami into a balanced soy sauce base. Despite its concentrated foundation, the soup drinks smoothly, clinging effortlessly to springy, medium-thick noodles.
The other pillar of the menu is the Tori Paitan, a salt-base ramen with the velvety texture of a vegetable potage. Domestic mature chicken frames and chicken feet are simmered over high heat to extract an opaque golden stock, finished with the gentle sweetness of sweetcorn to yield an unusually round, mellow richness. For dipping fans, the Toku Tsukemen showcases straight, medium-thick noodles made with tapioca for extra bounce, served alongside a balanced dipping sauce accented with dried bonito powder, acidity, and a touch of sweetness.
Side dishes receive the same measured attention. The Ittoku Chahan fried rice is whipped up quickly over a high flame with rich Okukuji eggs, earning a reputation for its light, fluffy texture. Diners can also add pan-fried gyoza seasoned with house spices and packed with Japanese vegetables, or round out their meal with small rice bowls such as half-fried rice, pork bowls, and salted green onion chashu bowls.
With its calm and understated atmosphere, the shop welcomes solo eaters as naturally as those dropping in with companions. It works smoothly for a casual lunch or dinner, offering space to unwind over a cold bottled beer or highball alongside seared chashu appetizers.
